Recipe: Tomato Brown Rice

INGREDIENTS:

  • 6 cups cooked brown rice
  • 6 tbsp tomato sauce / tomato based pasta sauce
  • 1 large egg
  • 1 large yellow onion
  • 4 tbsp water
  • 1 cup chinese spinach (optional)
  • cooking spray

DIRECTIONS:

  1. Coat pan with cooking spray.
  2. Fry onion until slightly transluscent.
  3. Mix in chinese spinach until it deflates slightly.
  4. Add in cooked brown rice, tomato sauce, beaten egg and water.
  5. Mix well, until rice is evenly coated. 
  6. Stirfry until preferred texture (I like mine a little dry).
  7. Serve / Cool and store.
