so my current location is knoxville, tennessee.  it is probably one of the most humid areas in the...

So today was day one of my new workout plan (see my goals for June post) and I think I did pretty good!

Intake:

Breakfast: homemade smoothie (frozen strawberries and peaches, fresh strawberries, a banana and milk; delish!)

Work Snack: an orange, a banana and 1 can of low sodium v8

Pre-workout snack: a bowl of plain 2% yogurt

Lunch: a huge plate of shrimp salad: shrimp tossed in homemade asian vinaigrette (ginger, sesame oil, rice wine vinegar, coriander, chillies, garlic) on top of arugula, spinach, romaine lettuce, red & yellow peppers, cucumber, mushrooms, roma & cherry tomatoes. the salad leaves also came very with small portions of asiago cheese, flax seed crackers, almonds, those crunchy yellow asian noodle-looking thingies, pineapple and tangerines so we threw them in there as well. mmmm soo yummy!

Before school snack: kiwi and a small bowl of special k with red berries and milk

While driving snack (my sister fed me lol): about 6 bites of Sri lankan style lemon rice and spicy potatoes mmm

In-class snack: some blueberries, blackberries, strawberries and cherries

Dinner: dahl (lentil curry) with spareribs on top of rice. Mmmm my mom is an amazing cook.

I also had 2 cups of green tea and some water.

Workout: I did C25K (W1D3) and 30 mins of power yoga which I absolutely love. The only workout which makes me feel energized, relaxed and rejuvenated while I sweat buckets.

So overall I think I did pretty good today, although I definitely need to up my water intake. Other than that, I think I may have gone a little overboard with the fruit; I probably should’ve substituted some of them for veggies. I wonder if it’s bad to have too many fruits in one day (ie too much sugar)? Either way, it’s definitely better than snacking on chips or cookies so I’m not upset about it. Hopefully the rest of the month goes this smoothly!

I watched this on the skinny. I never really thought about it that way. And what she was saying applied to me. I am always like: “If I lose this, then this”. I never realized i did that before I watched that video. 

I’m now thinking that if you don’t love your self and are only healthy because you want to lose weight… you are going to get no where. It’s about a healthy life style. I still haven’t really grasped that but… I believe I am getting there. 

Well, maybe not healthy…but pretty low in calorie, and many of these are low in fat, too! It’s so easy to get rid of that sweet tooth with all of these yummy recipes. When I looked them up, I was like…are you forreal? 150 calories!? Chocolate? Sweetness? HELLS YEAH

Holistic Health Practitioner. Being a nutritionist has been up in the air for a while, but i didnt know in what aspect i wanted to deal with it. Once I started reading up on Holistic treatment I was hooked.

Dont get too excited. This could change tomorrow, or next month. lol. But to be honest i dont see myself ever having a full time job with a nice salary. Im a drifter. Not in it for the money or 401K. Im in it to help & educate my peers as best as i can.

Wherever that takes me, im down for the ride. =)

It’s not really on my meal plan but it’s not what I intended to cut out when I started my FVP challenge so I don’t see it as a failure. I wanna cut out bread, pasta and sugar mostly for these 28 days but after that cereal I can see just how wheat makes you hungrier than you were before. No wonder I was binge eating.

Reasons I love it: HEALTH are something of an acquired taste, with constant noisey electro, buried vocals, frantic drumming and a frankly terrifying Twitter account. The band use a studio album-remix album-studio album release formula and to date have released two remix albums just as good as the original efforts. But Get Color is still their best output to date, jarring pedal screeches and squeals accompanied by thundering percussion and their signature haunting singing, it’s a tough album to get through but when you get past all the noise it’s bloody good.

Day 22 Progress

Here’s my progress so far!  Ive noticed steady improvement since Day 1 and am really starting to see how close I am to my ultimate goal.  This 45 day jumpstart has been great so far, but it only motivates me to keep it going for the rest of my life.  I have finally found a lifestyle that has created immediate results but with long term health as the ultimate goal.  My energy levels are high and constant.  My motivation, strength, and stamina feel as good as they have ever been. 

The “discipline” to keep it up is almost non-existent.  I work out in the morning because it makes me feel better all day.  I eat healthy to fuel my energy and mood.  I almost never have cravings for foods outside of what Im supposed to eat.  If I cheat, its easy to forget about and get right back on track.  Its amazing whats possible when you narrow down your diet and exercise program to the few things that are truly important and beneficial.

Topiramate, better known by Topamax, is a prescription medication used mainly to help with epileptic seizures and migraine headaches.  Topamax gained approval for sale on the US Markets ins 1998, since then it has been a immensely popular drug.  One of the main reasons why Topamax has become so popular is that it works by attempting to avoid the seizures and headaches before they happen rather than simply just relieving the pain the symptoms cause.  Topamax is able to do this by keeping both the chemicals that excite the nervous system under control for migraines and not allowing the nerve cells in the brain to get excited for seizures. 

Topamax, like many other prescription drugs, does have its own side effects, these side effects are predominate mainly with pregnant women. Topamax has been known to cause several types of birth defects to unborn children.  One of the most common defects are cleft lips and palates, which are gaps due to the non-fusion of the particular body parts pre-birth.   The increase of the number birth defects linked to Topamax has caused the United States Food and Drug Administration (FDA) to require the makers of the drug to revise warning labels to include possible effects on pregnant women.   The Advisory, dated March 3, 2011, has already by complied to by the makers of Topamax.

For many, however, these updates have already come too late.  Studies shows that the frequency of cleft palate/lip birth defects caused by mothers who have taken Topamax during pregnancy has risen in the recent years.   Also shown in these studies is that babies of mothers still in their first trimester of pregnancy are the most vulnerable to these side effects.   Though these birth defects are treatable, the multiple surgeries required are both costly and painful to the child. 

If you believe that your child was born with a cleft palate or lip due to your Topamax in take during pregnancy then you should get the compensation that you deserve.  Though it may be difficult to gain this compensation a good Topamax Lawyer should give you the information and consultation you need to move forward.

So I got about 2.5 hours of sleep. Ugh. I am running on adrenaline and a homemade latte. Just finished cardio and stretching at the gym. I will need to nap, but hope to keep it on the short side.

Since I was up a lot last night, I thought about other things I could do that is being nice to myself and I realized I could pay more attention to my appearance. Because when I think I look good, I feel better about myself as a result?

Also this would help me declutter. You see, I have a ton of beauty samples. I’m on my 9th month as a member of birchbox.com; they send me 4-5 (sometimes more) deluxe-sized (sometimes full size) make-up, skincare, and haircare samples. I pay $10 per month or sometimes use my loyalty points toward my membership as well. While the value of the items more than pays me back, I should use it all, right? Well, I do use everything. But I could use them more often and not just on special occasions. I deserve to look and feel Bice every day. Now where is that eye cream and concealer? I need it pronto.

the verdict? They are amazing. Seriously. Rich & buttery but with no butter or egg.

Plus, gluten-free and dairy-free to boot. Definitely a great way to satisfy a sweet tooth, as they are full of omega-3’s and other healthy fat + protein. They’re still sugary, so not something to mindlessly munch on. But still. Damn good. Even husband likes ‘em.

Cassidy) — Yesterday in Madison, Wisconsin protesters picketed Governor Scott Walker’s appearance at a Special Olympics ceremony outside the State Capitol. As the event kicked off, the University of Wisconsin marching band played and Bucky Badger danced and hammed it up with the Olympians. Interspersed throughout the crowd were dozens of pro-union protesters.

my face hurts like an @%$(*@$ $@^@*$^!$)!$^$!$!. I don’t exactly know what bad words I’m choosing to say there, use your imagination.

Any recipe suggestions? All I have right now is grapefruit and strawberry smoothies.. :X Any ideas would be greatly appreciated!

I volunteered this morning for the Susan G. Komen Race for the cure event in Downtown Raleigh today and it was absolutely amazing!  I really felt like I was doing something so much bigger than myself, even though it was just passing out water every little bit helps!

This event was really important for me because I lost one of my cousins to it a few years ago.  We didn’t have the greatest relationship but she was family and I really wish that our relationship would’ve been different but I guess it was her time. Regardless, I will celebrate her life and let her know that she is not forgotten.

I got really emotional while being there today because I’m battling cancer now.  I have skin cancer, I was diagnosed in March of this year and it was a hard thing to come to terms with.  I just started chemotherapy las month and it was the scariest thing I’ve ever been through.  While it’s not fatal or life threatening it still takes a toll on my body.  Cancer is Cancer and while I’m going through my fight I will do everything I can encourage others.

I’ll be participating in this race and many other’s from now on because I absolutely loved the way I felt today!  Just being there with other people who have beaten cancer, friends and family who know people who have cancer, and just general supporters of a good cause!  If there is a foundation in your area and they are doing anything in the community, please, Please, PLEASE get involved.  You don’t have to personally know someone but just think….your supporting life, health, and strength…WHO WOULDN’T WANT THAT!

Yummy! How about a nice berries fruit salad today before this...

….but CRUNCH!

Mi nombre is Maria, and I want to be a marathoner. Well, I am kind of being a scary cat about it and want to back out, but part of me feels like if I don’t go through with this.. it will haunt me forever. 

I will be running the Bank of America Chicago Marathon in October (omaaaagaaawd 26.2!!!) and I have not yet started training. So that you all could get a little bit of an idea of who I am, or my history of running/being active…lemme tell’yuhh wassap.

  • In the summer of 2008, I lost a good 30(ish) pounds by occasional jogging, improving my ways of eating. I’d say this was awesome and opened my eyes to so many things I was missing out on.
  • Summer of 2009 was a weird pause, and I didn’t gain or loose.
  • Summer of 2010 I dropped another 20 pounds— I began jogging, a lot! I finished my first race ever, the Soldier Field Fleet Feet 10 Miler, and also completed the Chicago Half Marathon. 
  • Summer of 2011— so far, I have not dropped more weight.. I tend to lose then gain in winter. It’s tough being an FBI agent, I mean..student/worker. I started on the Insanity workout plan just this week, and plan to keep it. I completed the Shamrock Shuffle (baby race) 5 miles. AND NOW… I will start on my official training on Monday. 

I am really excited to be sharing my experience with the public, in case anyone needs some motivation to become active, or if someone has any tips they can share with me. I am also REALLY into nutrition, so I will have healthy recipes up, as well as links and interesting runner’s info. This is the schedule I will be running on, except I will adjust it so my long runs can be Mondays.

We all think eating fruit means just buying fruit, cutting it up and popping it into our mouths. It’s not that easy. It’s important to know how and when to eat fruit. 

What’s the correct way to eat fruit? 

IT MEANS NOT EATING FRUIT AFTER A MEAL!  FRUIT SHOULD BE EATEN ON AN EMPTY STOMACH. 

Eating fruit like that plays a major role in detoxifying your system, supplying you with a great deal of energy for weight loss and other life activities. 

FRUIT IS THE MOST IMPORTANT FOOD.Let’s say you eat two slices of bread, then a slice of fruit.

The slice of fruit is ready to go straight through the stomach into the intestines, but it’s prevented from doing so. 

In the meantime, the whole meal rots and ferments, and turns to acid. The minute the fruit comes into contact with the food in the stomach, and digestive juices, the entire mass of food begins to spoil. 
Eat your fruit on an empty stomach, or before your meal! You’ve heard people complain: Every time I eat watermelon I burp, when I eat durian my stomach bloats, when I eat a banana I feel like running to the toilet, etc. This will not happen if you eat the fruit on an empty stomach.

Fruit mixes with the putrefying other food and produces gas. Hence, you bloat! 
 
 
There’s no such thing as some fruits, like orange and lemon are acidic, because all fruit becomes alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruit, you have the Secret of Beauty, Longevity, Health, Energy, Happiness and normal weight.
When you need to drink fruit juice drink only fresh fruit juice, NOT the concentrated juice from the cans. Don’t drink juice that has been heated. Don’t eat cooked fruit; you don’t get the nutrients at all. You get only the taste. Cooking destroys all of the vitamins. 

Eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it. You can go on a 3-day fruit-fast to cleanse your body. Eat fruit and drink fruit juice for just 3 days, and you will be surprised when your friends say how radiant you look! 

KIWI: Tiny but mighty, and a good source of potassium, magnesium, vitamin E and fiber. Its vitamin C content is twice that of an orange! 

AN APPLE a day keeps the doctor away? Although an apple has a low vitamin C content, it has antioxidants and flavonoids which enhances the activity of vitamin C, thereby helping to lower the risk of colon cancer, heart attack and stroke. 

STRAWBERRY: Protective Fruit. Strawberries have the highest total antioxidant power among major fruits and protect the body from cancer-causing, blood vessel-clogging free radicals. 
 
EATING 2 - 4 ORANGES a day may help keep colds away, lower cholesterol, prevent and dissolve kidney stones, and reduce the risk of colon cancer. 

WATERMELON: Coolest thirst quencher. Composed of  92% water, it is also packed with a giant dose of glutathione, which helps boost our immune system. Also a key source of lycopene, the cancer-fighting oxidant. Also found in watermelon: Vitamin C and Potassium.

GUAVA & PAPAYA: Top awards for vitamin C. They are the clear winners for their high vitamin C content. Guava is also rich in fiber, which helps prevent constipation. Papaya is rich in carotene, good for your eyes. 

Drinking Cold water after a meal = Cancer!Can you believe this? For those who like to drink cold water, this applies to you. It’s nice to have a cold drink after a meal, however, the cold water will solidify the oily stuff that you’ve just consumed, which slows digestion. Once this ‘sludge’ reacts with the acid, it will break down and be absorbed by the

intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.

Yay!

We went shopping, and although all the roommates’ stuff came out to $12 each, i bought another $15 of my own for healthy choices. Tomatoes, lettuce, strawberries, bagels, whole wheat bread, and so on. :)

So I made this salad for dinner! It has a ton of lettuce, half a tomato, fried chicken filet, cheese, onions and italian dressing. :D

Anyone ever had this? I tried it for the first time this past week. Mixed it in with my water (that cup  right thurr). It didn’t taste like anything but the little seeds became soft which made for an unpleasant texture. The label suggests using this on salads and other foods. I could see mixing this in with a smoothie.



I will start off with this, since it was my inspiration for making this blog in the first place!

I encourage all to watch it on your spare time. It truly is life changing!

Want To Know What To Eat To Lose Weight Fast?

Sometimes I realize that I’ve eaten so poorly at the end of the day and it scares me so much. What if my health slowly slips away because I don’t know how to eat properly? Because that’s what it is - I don’t know how. I don’t know what I should be eating and I don’t know how to make it. I don’t know how to find the motivation to make something and I feel appalled at the idea of eating another bowl of mac and cheese.

I’ve eaten so little since I’ve been home because I feel so powerless over my food. What’s in the fridge has very little to do with me beyond requests I may make and dinner is not my plan. I know I didn’t take the initiative at the apartment to eat properly, but I still did better than I am now because I felt more responsible for my food than I do here. I open the fridge and see nothing that interests me, so I just close it and sit back down.

I know that somewhere there’s a book or website that can help me, but I don’t know how to find it. I need new and exciting suggestions for food that go step-by-step and ease me into the concept of cooking. Lunch is my enemy, because I hate the standard sandwich, hot dog or mac and cheese. But what the fuck else is there to eat for lunch?

After a talk with the wife, more research and a documentary later I have decided to try going partly raw vegan for a month and see how it goes.

Honest to goodness, I needed serious motivation on this Monday morning to get up & go to the gym. I ended up sleeping past my alarm (read: my normal morning routine) and was severely discouraged when I realized I had like 15 minutes to get my butt out of the house if I wanted to work out before work.

In my groggy half-sleep state I seriously almost didn’t get up. Then I read a text on my phone from my friend Natalie who confirmed that we were getting together tonight. I was not going to have time to work out after work. Bummer. 

Still, I wasn’t convinced (still not completely awake) that I should, in fact, get up today. Then I remembered something. I remembered that last night I had put some old episodes I hadn’t seen of Doctor Who on my iPhone just so I could watch it at the gym. Score. Motivation = ? Done. Hey, whatever works, right? 

Sprang up out of bed, shouted to Mom was downstairs to ask her to brew me a cup of coffee, and did my “I don’t have to look good, I’m just going to the gym” quick get-ready routine. Which literally, by the way, just consists of getting my hair out of my face, brushing my teeth, putting contacts in, and putting on a clean set of gym clothes.

Ran downstairs, grabbed a thermos of coffee, a bowl of cereal (which I ate on the road, eep.) and sprinted out the door. I really, really don’t like having a rushed morning but as soon as I was on my way to my work out, I felt better about it.

 At the gym I did a little bit of weights then elliptical-ed away to Doctor Who ( I watched Series 2, episode 3, if you’re wondering)! It was SO awesome. I was sweating and pushing myself but I was not bored in the least. Though, I do think that perhaps some people may have been weirded out when, at a few different parts, I giggled, gasped, and got goose bumps. Yes, I am a mega-Whovian. 

Here’s the break down of what I did at the gym:

Weights: 

  • Leg Extension-

110 lb\10 reps\3 sets

  • Hamstring Curls-

60 lb\10 reps\3 sets

  • Calf Raises-

60 lb\10 reps\3 sets

  • Chest Press (on an Inclined bench)

12 lb\10 reps\3 sets

  • Chest Fly (on an inclined bench)

12 lb\10 reps\3 sets

  • Bent-over Rows with Triceps Kickback

8 lb\10 reps\3 sets

 Then I hit up the elliptical for 45 minutes with intervals of Crossramp 6 Resistance  and Crossramp 10 Resistance 10.

Ta-da! 

In other news, I do think I am going to try out posting photos of all of my meals + snacks in here. I want to start using this as a food journal, of sorts. I hope this will help hold me accountable for my choices and also to help me sort out if I really am hungry for the things I want to eat. So I apologize in advance if my meals are super boring.

I have some bah news. Day 6 of the 30 Day Shred did not happen for me. I had school on Sunday, walked home (about 2km) and had to pack up to go see my mom so I could work a shift in my home town. My shift was from 5am-2pm so I chose sleep over exercise. 

Today has been very hard everything-wise. I have a test tomorrow that I have yet to study for and I’m super exhausted from my dumb shift at work. I did manage to do Day 7 and guess what?! I have an injury. My left knee is messed up and whenever I put pressure on it it feels like needles. However, I kept on goin’ - probably not a good idea in the long run. I did the 30 day shred plus some modified versions of different cardio moves that I know so that I don’t get bored. I guess I burned maybe 200 cals? plus standing for 9 hours today….how many calories does that burn? and does that even count? Probably not.

Now, let me tell you problem #2. My wonderful mother brought me Arby’s for dinner yesterday and made me feel guilty if I didn’t eat it. So I did. I should also mention that I have celiac disease. I can’t eat gluten without getting sick. My family thinks its okay for me to have it once in a while because they have witnessed me eat bread, etc. (Although its very rare). So, to make a long story short: sick to my stomach. Ugh. Sucks!!!

Plus, I think Boston is winning…dammit.

Other than that, I have been trying to eat well. Although, I’m not seeing much of a difference. In fact, I feel fatter than before. I went to the mall and I felt like a whale. Maybe I’m retaining water? Well, I feel even less sexy than I did before and I’m not sure why. I don’t want to give up though. I’m just scared of keeping it up and achieving nothing…

Oh well. I hope your fitness goals are going better than mine.

  • Note: This is a long and winding road post. Also, I’m from Canada, and my story is rooted in that locale, with all its attendant privileges, cultural and economic.

I live with my parents. It’s increasingly common for people in their twenties, and even their thirties to stay at home longer, or to return to the nest after living alone. So what happens when your parents get older? I’ve had the experience of taking care of my parents, though not through old age. Caring for them was rewarding, because it really meant taking care of each other. It was also challenging.

When I was in my second year of university, and just starting to think about saving for my own place, my mother’s knee and hip problems were officially declared a disability. She was given a cane, put on the waiting list for surgery, given a modified exercise regimen and so many pills. She was in pain every day, sometimes all day.

Months later, my father was struck by a car while riding his bike to work. After the ICU there were weeks in a hospital bed, and then months of recovery at home. He was instantly retired—declared unfit to work ever again. This, I should point out here, is not quite the case. He has issues with memory and concentration, infrequent bouts of debilitating vertigo, and his temper is worse, but faced with early retirement, he pursued recovery relentlessly and eventually went back to school for a French studies degree.

With all this going down, I exchanged my job for a more flexible one, and threw myself into taking care of my family. Later, with my dad slowly recovering and increasingly independent, and my having taken over the burden of household chores from my mother, I had my second bout of major depression. After a solid year of suicidal ideation, general misanthropy and paranoia, I moved into a year of shaky recovery. I dropped out of school. I took up yoga and running and changed my diet. I did cognitive behavioural therapy and even tried giving up caffeine. It was years before I even considered going back to school. I’d left it in a mess and had lingering anxieties associated with class, matters bureaucratic and talking about my problems—probably that was the worst.

While I did the laundry, cooking, shopping and took my parents to doctor’s appointments, they took care of me in turn. They checked up on me—was I sleeping? Eating right? Getting exercise and sunlight? These things matter. When you’re dealing with depression, they matter a lot.

Our relationship wasn’t without difficulty. It’s hard to live with your parents in your early twenties. You want so much to be your own person; demonstrate your entirely grownup independence. It’s hard too, to help your father to the bath. Help your mother off the toilet. But not so hard as all that—probably not so hard as being taken care of by your daughter, so many years before you expected to need that kind of help. There was a lot of tension in the house, not least because we were all in pain, but slowly things got better.

These days we’re in a comfortable state of cohabitation. We split the bills and the housework—post surgery, my mother is far more able to do the sort of every day chores that used to wipe her out completely—and we’re all preparing to make another set of changes in our lives. My mother can now take the stairs without trouble, though problems with her right hip suggest another surgery may be in order, and it seems that arthritis is something to watch for. But she’ll be retiring in two years, and she’s got plans and determination. Now years after the accident, my father is studying at University of Toronto, and volunteering at a school part time. He’ll never work full time again—a half day is enough for him—but he’s busy and intellectually challenged. I finally went back to school. I’m slowly easing my way into grad school, and the gods willing, developing a career as a writer.

Between one thing and another, I never did leave home permanently. It wasn’t economical, but more importantly, it wasn’t the right thing for my family. These days, I’m thinking about it again, looking at my budget and options all over the city, but—let’s be honest—preferably close to my parents. I’m thinking about a career and about having kids. It’s a strange to find myself on this particular cliff, quite a few years late.

My parents are in their sixties and I’m in my late twenties. Perhaps too early to worry about what will happen twenty or thirty years from now, but having that experience, and having so recently seen the older generation of our family through old age and death, it’s on all our minds. I wonder sometimes what it would be like if we stayed together, and saw each other through the next stage of our lives. Or if I bought a house, and they moved into my home when the time for it came. I think about it a lot, and they do too.

My grandparents’ generation left a mark on us—my grandfather, who died alone but at home; my grandmother who died in a long term care facility, miserable and poorly cared for. Their successes and failures; our successes and failures. The difficulties that elders face in homes, nursing homes, hospitals and everywhere in public are on our minds, because disabled people are faced with similar indignities, frustrations, and abuses.

I wonder a lot about how we millennials will do, when it’s our turn to step up and care for those who cared for us. What happens when ‘failure to launch’ and ‘returning to the nest’ meets retirement, old age, and eventually death? So much will depend on class, race and community. The narratives we’ve been treated to so far are light and airy, white middle class romps through delayed development. It all comes down to clinging too tightly to childhood, it seems. I wonder when we’ll see the stories of people of colour, or working class millenials who simply never broke through that glass ceiling. Stories of rural folks who’ve watched their local economies slow to a trickle, moved back in with their parents, and now must see them through their twilight years—but how? What will government austerity and the decline of the welfare state mean in twenty years? Thirty years?

I don’t meant to suggest that the experiences of my generation are unique, or even that we’ve got it worse than our parents did, or their parents before them. Life is struggle. We’ve been struggling since we slithered out of the primordial muck, and we’ll be struggling right up until our star burns out. But I wonder, and I think that many people close to my age do too. I’d like a better metaphor than battle, but what else can we call the current political climate but class war? And too, a social cold war, where issues of race, sexuality and personhood are played out in some other neighborhood, some other city, some other country, but certainly not in my backyard. We are post racial. Post discriminatory, period. Political correctness is last decade’s problem, and we’re done with all of that, thank you. These days we’ve got to worry about all those pensions that are about to come due.

My family has been everything to me, and I feel strongly that building bonds of family and community should be a priority for us all. Not just as individually, operating as private citizens, but through the state and through local, national and international organizations. I feel strongly too, that we are all of us up to it. So much of what we hear about baby boomers retiring is media panic, I think. The world will not implode because a lot of Westerners are set to retire at once.  

I didn’t have a conclusion in mind when I started writing, and I don’t think I’ve quite managed to find one. So I’ll just ask you guys to tell me your stories, if you’d like. Your worries, plans, theories and whatever else you’ve got.

I’ve never cooked fish before, unless you count scallops or shrimp, but never areal fish with the skin and everything! This was a new and exciting challenge that ended scrumptiously :)

My house is located literally up the street from a ShopRite and all our lives my mother has been buying groceries there. However, recently I have noticed that at this particular establishment things have taken a downhill turn; it all could have started when I noticed garlic in a basket with a sign that read “GARLIC - grown in China.”

So although gas prices are a bit lofty these days I convinced my mom that a trip to Adams Fairacre Farms would be well worth it. We only live about 10 minutes away from this farmers market-like store and even though the prices are a bit higher than what you would find in the super-chains, its a much better option for an incredible selection of produce, meats, and nutritionally stellar foods (being that a great amount of it is local grown, organic, or all-natural). 

Because I am (openly) food/nutrition obsessed, I’m also interested in passing my knowledge on to anyone willing to listen. So when my mother expressed that eating healthier and exercising were two of her main goals for this summer of course I jumped at the chance to help her - plus, who will ever listen to random babbling more faithfully than our moms? 

When we arrived, a familiar feeling came over me - like a prospector staring into a mine full of diamonds. Immediately we began to fill our cart with these gems - tomatoes off the vine, fresh (non-chinese) garlic, pears, apples, peppers, green beans, portobello mushrooms, and other local grown produce. Then we moved on to the meat and seafood section where a multitude of brilliant cuts awaited us. This is where I discovered my fish. It was the best filet of salmon I believe I’ve ever seen. Knowing just how healthy salmon is and that dinner time was fast approaching I decided to purchase this filet and try grilling it for tonights meal. 

After gathering a few more things, it was back to the house. I had so many different meals planned in my head for the coming week - portobello burgers, turkey sausage and peppers, etc. but I tried to focus on what was in my immediate future - the salmon! So how was I to prepare it- plain or with a marinade? Where should I grill it - the stove grill pan or the outdoor grill? Suddenly memories began to flood my head of stories from the experts about salmon not cooking all the way through, sticking to the grill and falling apart. But I couldn’t let that stop me - how bad to could it be, really? 

I decided to consult my favorite food pal - foodnetwork.com to read the basic steps about cutting the filet into servings and preparation. Once again I was very pleased and learned everything I needed to know. So after deciding to use a low-calorie teriyaki sauce for the marinade, it was time to get working. I turned on the outside grill and decided to use a grill pan so it wouldn’t be on the direct heat. I threw some olive oil on there and let it heat up. Back inside I laid the filet on a cutting board and sliced 4 even pieces. Then, after making a few slits into each piece, I lightly brushed on the teriyaki sauce and let them sit for a few more minutes while preparing the steamed green beans. 

Finally, it was time. I put them on the grill pan, skin-side down first for about 4-6 minutes. During that time frame I started boiling water for a home-made whole wheat/flax seed pasta we also picked up at Adams (great right?!). Now the meal had the three perfect components: Starch, Vegetable, and Protein…YES! ‘Its all coming together’ I thought to myself. Time was flying by and before I know it I was back outside flipping the salmon over meat side down for another 4-6 minutes. When the pasta was done I tossed it with a bit of rosemary olive oil and let it sit while I set the table and poured glasses of water. 

It was time to take the salmon off the grill - will it stick!? I held my breath, slipped  a spatula under the largest filet and lifted up - CLEAN! Yes! I took them inside, removed the skin and poured on a bit more of the marinade. Done. A beautiful, healthy, and relatively simple summer dinner. Now all that was left to do was enjoy it with my parents. What a treat! :)

I can’t believe I’ve lost two pant sizes in two months. It’s much easier to go down in size on the upper body. Wow never thought it was possible.

Last week, the USDA unveiled MyPlate, an easy way to help you eat the right portions of the basic food groups. MyPlate replaces te familiar food pyramid chart.

You can use the MyPlate icon as a daily plan for building healthier eating habits. There are no numbers, calorie counts or exchanges. By “eye-balling” the plate, you can see that half of your plate should be fruits and vegetables. Grains grab a larger sare of the side of the plate shared with protein. Dairy is represented in the glass of milk.

Visit ChooseMyPlate.gov for tips and tools to help you build a custom plate and plan. To get the most out of your meal plan, the USDA suggests:

  • Enjoy your food, but eat less.
  • Avoid over-sized portions.
  • Make half your plate fruits and veggies.
  • Make at least half your grains whole grains.
  • Switch to fat-free or low-fat (1 percent) milk.
  • Compare labels and choose foods with less sodium.
  • Drink water instead of sugary juices or sodas.

I am curious as to what you think about this new nutritional blueprint.

Breakfast: Bowl of cantaloupe melon and watermelon, porridge with skimmed milk and a little bit of agave nectar. Water.
Lunch: Scrambled egg (cooked with butter), seasoned with black pepper, on cheese with salad. Water.
Dinner: Nando’s Beanie pitta with no mayonnaise and no sides, houmous and chilli oil with pitta. 3 glasses of Diet Coke.
Snacks: A digestive biscuit, ginger nut and a hobnob with a cup of tea. A yoghurt with rhubarb compote.

Not the healthiest day, but a pretty good day considering I had an exam (I comfort eat A LOT). I’m home alone and pretty tired so I’m going to snuggle up on the sofa with a nice cup of tea and a film.
